Peach Cobbler
!±8± Peach Cobbler
Here's my version of homemade Peach Cobbler. 4 bags frozen peaches 1 stick butter 1/2 to 3/4 cup brown sugar 1/2 to 3/4 cup raw sugar 1 TBSP cinnamon 3 tsp nutmeg 2 tsp vanilla extract 2 TBSP all purpose flour Two pie crust In large dutch oven, heat peaches on medium heat for about 5 minutes. If possible, reserve about 1/4 cup of peach juice in glass measure. Add butter stick and stir occasionally until melted. Be careful not to over work peaches so they won't be mashed. Next, add both sugars and stir gently. Add spices and vanilla extract. Turn heat to simmer and cover to let spices and sugar incorporate for about 10 minutes. With reserve peach juice, add about 1 TBSP flour or more, depending on how much liquid you have. This should form a nice paste about the consistency of thick pancake batter. Be sure to stir vigorously so that there are no lumps in flour. Add this mixture, 1 tablespoon at a time, to peach mixture. This is to thicken the peach mix so that it's not runny. Stir gently until incorporated. Remove from heat. Prepare 9x13 baking pan with crust on the bottom of pan. Add peaches with slotted spoon until pan is full. Next, scoop remaining liquid onto of peaches. Be careful not to overflow pan. Make lattice design ontop of peaches. Sprinkle with 1 TBSP sugar and 1 tsp nutmeg.
